what is a charity?

i'd like to know how i can find out about what actually is a charity.
If you read the inland revenue pages, it talks about gift aid (to a registered charity) and donations to charitable activities, which I assume to mean non-registered charities. perhaps there isn't a different but i need to know as i want tax relief to be an incentive to firms to sponsor a particular organisation.
