which business structure is best for my idea?

I want to set up a small theatre production company, specialising in unusual plays, and focussing upon a specialist though plentiful audience in and around London. I would like to know how to set this up to comply with revenue and any other legal requirements - because I will be applying for grants etc. I have set up small theatre companies before, however this was without any formal registration. Could you please advise which structures are available, and how I can get information about them? Does such a structure as a coop exist for such a venture? and if so, were can I find out about this?
